Description
This is one of my favorite. A dark brown pour with a nice foamy off white head. The taste is of caramel, floral hops and a slight hint of chocolate.

History
The Brewery of Chimay is famous for brewing complex Trappist ales. Chimay has been brewing beer since 1862 and the monestary uses the proceeds to to fund their church. It is rumored that they have recently altered the yeast strains they use resulting in a less complex ale.
